These are grown for use as green salad and are eaten raw at the seedling stage. When sown together, mustard is sown three to seven days later than the cress. Keep the soil moist with a sheet of plastic, until the seeds germinate. It takes about four weeks reach harvest. The seed is generally sown in boxes of humus rich soil, by scattering the seed on the surface and covering with a layer of similar soil. The crop is harvested by cutting off the seedlings at ground level with a pair of scissors. Take care to keep the seedlings from falling on the soil, so that they do not become gritty.
